Ingredients

For the chicken stew:
  • Boneless Chicken Breast: 250 grams
  • Garlic paste: 1/2 teaspoon
  • Black pepper powder: 1/4 teaspoon
  • Salt: to taste
  • Water: As much as needed to cook the chicken
For the salad and dressing:
  • Mayonnaise: 3-4 tablespoons
  • Plain Yogurt: 1 tablespoon
  • Cucumber slices: 1/2 cup
  • Carrots, chopped/shredded: 1/4 cup
  • Chopped capsicum: 2 tablespoons
  • Chopped onion: 2 tablespoons
  • Chopped green chili: 1 (if you like it spicy)
  • Lemon juice: 1 teaspoon
  • Black pepper powder: 1/2 teaspoon
  • Chopped coriander leaves: a little (optional)

Method

  1. Perfect Chicken Preparation: Here is a small kitchen tip: To prevent chicken from becoming dry or tough, it is important to cook it properly.
In a pot, boil chicken cubes, garlic paste, chili powder, a little salt and water on medium heat for 10-12 minutes. When the chicken is cooked and the water dries up, remove it and let it cool. When it cools, shred the chicken with your hands or a slotted spoon.
  2. Preparing fresh vegetables: While the chicken is cooling, finely chop the cucumber, carrot, capsicum, and onion. Remember, the fresher and crispier the vegetables, the better the crunchiness of the salad.
  3. Secret dressing preparation: In a large mixing bowl, whisk together the mayonnaise, yogurt, lemon juice, chili powder, and a pinch of salt until smooth (the combination of yogurt and mayonnaise gives the salad a rich yet light texture).
  4. Mix all the ingredients: Now add the shredded boiled chicken and chopped vegetables to the bowl of dressing. Mix everything together lightly with a spoon or spatula, so that the dressing adheres well to each piece of chicken.
  5. Serving: That's it! Your delicious Homemade Chicken Salad is ready. Sprinkle some chopped coriander leaves on top and serve.
Pro Tip: Chill the salad in the fridge for at least 15-20 minutes before serving to enhance its flavor!
