Ingredients
  

The Cake Batter:
  • 50 grams salted butter, room temperature
  • ½ cup caster sugar
  • 1 large lemon, zested
  • 2 large eggs
  • 3 tbsp fresh lemon juice
  • 210 grams Bob’s Red Mill 1:1 Gluten Free Plain Flour
  • 1 tsp gluten-free baking powder
  • ½ tsp bicarbonate soda (baking soda)
  • ½ tsp xanthan gum
  • 1 cup tinned blueberries, drained (keep the juice aside!)
The Zesty Glaze:
  • ½ cup icing sugar (powdered sugar)
  • 1 tbsp fresh lemon juice
  • 1 tbsp reserved blueberry juice from the tin
  • Extra lemon zest, to serve
  • 2-3 tbsp milk or extra blueberry juice (if needed to loosen the batter

Method
 

  1. Prep your space: Preheat to 180°C / 350°F. Grease an 8-inch round cake tin and line the bottom with parchment paper. Trust me, don’t skip the parchment unless you like playing cake roulette.
  2. Cream the base (2-3 mins): In a medium bowl, beat the room-temperature salted butter and caster sugar together until pale and fluffy.
  3. Add the wet ingredients: Whisk in the eggs one at a time, followed by the fresh lemon juice and that fragrant lemon zest. Rubbing the zest into the mixture releases all those gorgeous essential oils.
  4. Mix the dry ingredients: In a separate bowl, whisk together the gluten-free plain flour, baking powder, bicarb soda, and xanthan gum to ensure everything is evenly distributed.
  5. Combine gently: Stir the dry ingredients into your wet mixture until a smooth batter forms. If the mix looks a little too thick or stubborn, fold in an extra tablespoon of your reserved tin blueberry juice to loosen it up.
  6. The berry fold: Very gently, fold your drained tinned blueberries into the batter using a spatula. Try not to overmix, or you’ll end up with a completely purple cake!
  7. Bake to perfection: Spoon the batter evenly into your prepared tin. Bake for 35 to 40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  8. Cool completely: Let the cake cool in the tin for 10 minutes, then transfer it to a wire rack [don’t cut it yet, I know it’s tempting!].
  9. Glaze and dazzle: While the cake cools, whisk together the icing sugar, lemon juice, and the reserved blueberry juice until a smooth, brightly colored glaze forms. Drizzle it generously over the cooled cake and top with extra lemon zest for that gourmet pop.

Notes

  • How to store leftovers: If by some miracle there are any leftovers, keep the cake covered at room temperature for up to 3 days. It stays surprisingly moist!
  • Can I use almond flour instead? No, I don't recommend swapping the flour mix for almond flour 1:1. Almond flour behaves very differently and will make this specific recipe too heavy and greasy.
  • Is bicarb soda necessary? Yes, because we are using fresh lemon juice (an acid), the bicarb soda reacts with it to give the cake that extra fluffy lift it needs.
