  • Overripe Bananas (2 medium): The browner and spottier, the better! Overripe bananas give these muffins their signature sweetness and moisture.
  • Rolled Oats (1.5 cups): Quick oats or old-fashioned rolled oats work great. You can quickly pulse them in a blender if you prefer a finer texture.
  • Eggs (2 large): These act as the binder and give the muffins structure and protein. (For a vegan option, substitute with 2 flax eggs).
  • Peanut Butter or Almond Butter (1/2 cup): Adds healthy fats, rich flavor, and keeps the muffins moist without needing oil or butter. Look for natural, runny nut butter for best results.
  • Optional Mix-ins: Want to spice things up? Add a handful of dark chocolate chips, chopped walnuts, or a pinch of cinnamon!

Method
 

  1. Prep Your Oven and Pan

    Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or spray generously with non-stick cooking spray.
  2. Mash the Bananas

    In a large mixing bowl, mash the bananas with a fork until smooth. A few small lumps are totally fine!
  3. Combine the Wet & Dry Ingredients

    Whisk in the eggs and nut butter until completely combined. Then, fold in the rolled oats. Stir well until a uniform batter forms.
  4. Fill and Bake

    Divide the batter evenly among 8 to 10 muffin cups (they will fill about 3/4 of the way). Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean and the tops spring back when lightly touched.
  5. Cool and Serve

    Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm!
